Broken Glass Jelly
Tessy and I went to a Christmas party on Sunday and we made a Broken Glass Jelly dessert for the party. You need a mould but its very easy to make. Everyone seemed to like it!
Ingredients
3 packets of flavored jelly . We had lemon, raspberry and lime
1 can sweetened condensed milk
300ml cream
1 cup apple juice
1 & 1/2 heaped table spoons unflavored gelatin
Method
Prepare the jelly in three individual bowls as per the instructions on the pack. Allow to set.
Chop up into largish chunks about half of the jelly from each bowl and place the jelly bits into the mould. Boil the apple juice in a microwave and mix in the gelatin until its dissolved. In a separate bowl mix the condensed milk and cream, pour in the apple juice and mix well. Pour the milk mixture over the jelly and close the mould. place in the fridge until set.

Easy butter cakes
I had no desert the other day so thought I might try to bake something. I had no shop cake mix so found the following recipe via google. The result was some lovely cakes I have been taking to work for morning tea.
Ingredients.
2 cups self raising flour
1 cup sugar (I use about 2/3 as I don't like it to sweet)
2 eggs
1 teaspoon vanilla flavoring
2/3 cup milk
3 tablespoons butter melted. (about 100gms)
In a mixing bowl put in the dry ingredients and form a hole in the middle. Crack in the eggs then add the other ingredients. Mix well for a few minutes, you can use an electric mixer but I just use a wooden spoon. When the batter is well mixed and smooth pour into greased cake tins and bake at about 180 deg for about 20 minutes or until cooked.
The simple recipe makes a good base for other type of cakes. I added some blueberries and they were delicious.

The boys have been cooking chocolate fudges. First here is Nicko:
Ingredients
1 x 395g can sweetened condensed milk
100g butter, cubed
255g (1 1/4 cups) brown sugar, firmly packed
2 tbs glucose syrup
150g good-quality dark chocolate, finely chopped
60ml (1/4 cup) Baileys Original Irish Cream liqueur

Maltese Cheese Pie (Torta tal-Rikotta)
I decided to make a traditional Maltese dish the other night, Maltese Cheese Pie. Delicious with a small salad or by itself.
Ingredients:
600 gms ricotta cheese.
2 sheets puff pastry
1/3 cup chopped parsley
3 eggs beaten.
Method
Add most of the 3 beaten eggs and the parsley to the cheese but save about a teaspoon of the eggs for latter. Mix all together. Season with salt and lots of pepper. Place a sheet of pastry in a greased pie dish to form the bottom. Fill with the cheese mixture. Cover the top with the second pastry sheet. Fold over the edges and close with a fork. Paint the pie with the remaining beaten eggs so it will brown. Cut a few vents in the top to allow steam to escape. Bake at 180C for about 45 minutes or until golden brown.

Karma's fish and chips
Yummy recipe

A slightly healthier option to a classic meal. Quick, simple, and absolutely delicious!
Ingredients:
I kg of kipfler potatoes
400-500 g of fish fillets (I used snapper)
A few sprigs of thyme and rosemary
5 cloves of garlic
Salt & Pepper
Olive Oil
Lemon to Serve
Place potatoes in a pre-heated oven of 200 degrees celsius for 30 mins. Take out and turn, place fish on top, but back into the oven at 220 degrees Celsius for another 20 mins, or until fish is cooked.

Beef stroganoff
Had a go at cooking Beef Stroganoff tonight . It was delicious. Here's the recipe taken from the back of a can of Campbell's soup.
Ingredents
500 grms beef strips
200 grms mushrooms sliced
1 teaspoon paprika
1 medium onion, sliced
can of condensed cream of mushroom soup
1 tablespoon tomato paste
0il for cooking.
Some sour cream
Method
In a sausepan heat some oil and cook the beef until brown , about 3 minutes.
Remove the beef and set aside. Throw in the onions and cook until transparent. Add the paprika and the tomato paste and mix. Add the cream of mushroom soup then put back in the beef and mushrooms. Mix well and bring to boil. Simmer for about 40 minutes without the lid stirring occasionally.
Before serving add some sour cream (I used yoghourt instead, a good substitute). Serve with mash, rice or as I did pasta.

Curried Sausages
I made some curried sausages tonight. Turned out great.
Ingredients
500 grams sausages. I used heart friendly lean sausages
1 can peeled tomatos
2 tsp keens Curry
1 onion
1 tsp plain flour
1 beef stock cube
1 cup frozen peas
1/4 cup sultanas
Method
Boil the sausages in water for about 2 minutes. Then drain and set aside.
Slice the onion into rings and fry in a saucepan with a bit of oil until the onions become transparent. When done pour in the tomatoes and squash them and let them heat up. Add the sultanas. Mix the curry powder and flour in a cup of cold water and add to saucepan. Put back in the sausages and add enough water to cover sausages. Mix well. Simmer for about 15 minutes. In the final 5 minutes add the frozen peas.
Traditionally served with potato mash or rice but tonight I had it the Indian way with Naan bread.

Aussie Griller, or Karl Petersen as he is otherwise known, is a Melbourne-based customer service worker who last September launched his own cooking channel, specialising in simple man-friendly meals, on YouTube.
In doing so, he joined a growing number of Australian men - most of them amateur cooks - to have launched their own YouTube cooking channels, attracting millions of global viewers.

''We have definitely noticed a rise in the number of Australian men hosting their own cooking channels,'' says YouTube spokeswoman Kate Mason. ''There are quite a few of them out there now and some of them have got a really significant global audience.''
One of the most popular is Perth-based father of one, Rob Nixon. In 2008, while working as ground staff at Perth Airport, he launched Nicko's Kitchen ''as a bit of a hobby''. Almost three years later he has two more channels, Nicko's Bakery and Nicko's Baby Food, and almost half a million viewers a week.
His channels, which are based around ''simple foods that anyone can make'', are now so popular here and overseas that just over a year ago he quit his job to work on them full-time. He films five cooking shows a week and now makes a living out of it.

Fruit Cake
I'm not very good at cakes but had a go at a 4 Ingredient version which came out swell.
Ingredients
1 kilo mixed dried fruit
2 cups fruit juice. You can use any, I used apricot nector as that was the cheapest
2 cups self raising flour
Method
Soak dried fruit in the juice overnight. The mix in the flour a bit at the time. When its well mixed place in a greased cake tin and bake at 200 deg two hours.

Microwave Cakes
Hmm... looks easy enough . Going to have to try one.
Irish Coffee
Irish Coffee is favorite beverage of mine. Once you know the recipe not only can you make it at home but just about any club can make it for you.
Ingredients
Coffee, one long black.
1 teaspoon suger
1 shot of Irish Whisky
whipped cream
method
In a glass mug make the long black, add the sugar and mix. Then add the whisky. Top with the whipped cream. Then take it out and show your friends!
Make sure the sugar is added before the cream or it will spoil the effect.

I had a go at David's Sausages in Brown Onion Gravy tonight. Lovely, just the thing for a cold winter night. I used extra lean sausages and had it with lots of steamed veggies so it was a reasonably healthy meal and cheap too.

Little lemon cheesecakes
Had a go at a 4 ingredients recipe yesterday. The results was delicious.
ingredients
280 gram jar lemon butter
8 butter snap cookies
250 grams cream cheese
some berries
You will also need a muffin tin and some of those paper cup cake containers
method
Soften the cheese with an electric mixer. Mix in the lemon butter until you have a smooth mixture. Place the cookies in the paper cups smooth side up. Put the paper cups in the muffin tin then fill them with the mixture.
Freeze in the fridge for a couple of hours then decorate with the berries.

Pizza!
Pizza and kebabs are my favorite fast food. I often make a version of the prosciutto and bocconcini pizza in summer when I have fresh basil. The good thing about home made pizza is you can control the amount of cheese and other fats. Good for the waist line.

Maltese Baked Potatoes with pork chops (Patata il-Forn)
I haven't had this dish for years but decided to give it a go. I checked out several recipes but settled on a 4 Ingredients version of my own invention. Most recipes need curry flavoring and chicken stock so why not combine both? So here's Ralph's Maltese Baked Potatoes. (You can find the real version here)
Ingredients (for 2)
3 large potatoes
2 pork chops
1 large onion
1 packet chicken curry instant soup
Method
Slice up the onion ans spread it over the bottom of a greased baking dish. Sprinkle about 1/3 of the soup mixture over the potatoes. Lay the pork on top on the onions and sprinkle another 1/3 soup powder over the meat. Cut the potatoes into thick slices and layer over the meat. Sprinkle the remaining soup powder over the potatoes. So as to not disturb the flavoring, pour in some water from the side of the dish. Cover the meat with water. Cover the dish with some aluminum foil. Place in the oven at 200deg. After one hour remove the foil and cook for another 1 and 1/2 hours. The potatoes should be golden brown when ready.
the potatoes are crunchy and the meat just falls off the bone. Delicious!

My mother regularly made rice pudding in winter, a delicious warm comfort food. Sadly that recipe went to heaven with her but last night I converted a 4 ingredients version into a dessert I'm sure she would have liked.
Ingredients
1/2 cup of rice
1 liter milk
2 table spoons of brown sugar
1 teaspoon vanilla flavoring
butter
some raisins
cinnamon powder
Place the milk, sugar ,rice vanilla in a greased baking dish . If you like them throw in the raisins, Shake some cinnamon in and mix well. Put a few knobs of butter on the top and add a bit more cinnamon (or nutmeg).
Cook in the oven for two hours at 150 degs.

5 minute chocolate cake
I made this a few months ago. Turned out OK but a bit too eggy. The Americans use some type of egg in a jar mixture which I don't think is available in Australia. Give it a go if you need a quick choc cake fix.

Cooking with Karma

Cooking fish
My lovely wife usually gets me to cook fish and chips for Sunday lunch. Salmon is her favorite fish. Rather then frying it in oil I just add some lemon slices and fresh parsley, season and wrap in foil. They cook in about 20 minutes in our toaster oven. Delicious steamed in their own juices.

Tip: Chux cheese cloth
In making cheese you need to filter the curds from the whey. That's what cheese cloths are for but I'm not sure where to get a cheese cloth from. What I use is a plain Chux wipe cloth. Its completely reusable, just wash after use, allow to dry and store in a sealable plastic bag.
How to make cheese
Making cheese is easy, just boil some milk then add some white vinegar to separate the curds. Drain in a cheese cloth add some salt and voila! Cheese.

Cream Liqueur : If you like Baileys Irish Cream you will like this!
This week I have a beverage recipe. Heres a way to save money and make your very own Baily's substitute. I made some the other night.
Cream Liqueur
Ingredients
1 can sweetened condensed milk
1 cup (250 mil) thickened cream (I use lactose free which is less cloying)
1 & 2/3 cups whiskey (or whisky or bourbon. The cheap stuff is OK)
1 teaspoon vanilla flavoring
1 teaspoon almond flavoring
2 tablespoons chocolate sauce
1 teaspoon instant coffee dissolved in one tablespoon boiling water
Method
Put everything in a blender and blend. Pour into clean glass bottles and store in fridge. Wait at least 24 hours before tasting to allow the liquid to properly set. NOTE: Shake the bottle well before drinking.
Extra ADULTS ONLY dessert recipe

Impossible Coconut Pie
I made this last night .Its the simplest dessert pie to make and just about fool proof. The coconut will rise to the top and the flour sink to the bottom to form a crust. Its great with some ice cream or custard sauce.
INGREDIENTS
1/2 cup butter
1 cup sugar
4 eggs
1/2 cup plain flour
2 cups milk
1 cup shredded coconut
2 tsp vanilla flavoring
¼ teaspoon salt
METHOD
Put everything in a blender and whizz for 20 seconds. Pour in greased baking dish and bake for about 45 minutes at 200deg C

4 ingredients Maltese meat pie (torta tal-laham)
Now that Easter is over meat is on the menu again. For lunch I cooked us a quick and easy version of the Maltese meat torta. Must have been good as we both had seconds!
Ingredients
2 sheets frozen puff pastry
1 can Tom Piper braised steak with onions
1 cup frozen pies (you can use just about any vegie but the Maltese use pies)
some butter
Method.
Put the pastry aside and let them defrost. Grease a pie dish and lay down a sheet of pastry.
Empty the can of braised steak into the dish. Add the cup of peas , it doesn't really matter if they are still frozen. Mix well. Cover with the remaining sheet of pastry. Seal the edges with a fork. Spread some butter over the top so it will brown. Cut 2-3 vents into the top to allow the steam to escape. Then cook at 200 deg C for 45 minutes all until the top is golden brown.
Allow to cool then enjoy! Any leftovers can be frozen and heated in an oven latter.

4 ingredients Maltese Baked Rice (Ross il-forn)
I loved my mother's "Ross il-forn" baked rice , but it used to take her some time to prepare. I developed a simple but delicious version that only require four main ingredients.
Ingredients:
2 cups rice
3 eggs
3/4 cups shredded cheese.
1 425g can of Spaghetti sauce with beef
In a greased dish pour the rice , can of sauce and cheese. Add 4 cups of water. Beat the eggs and add to the mixture. Mix well and add seasoning if required.
Place in a preheated oven at 200 C . After 1/2 hour or so it will be partly cooked. The rice would have absorbed half of the water but still sloppy. At the 1/2 cooked stage take out of the oven and mix well to stop the eggs separating. Place back in the oven and cook until the water is absorbed.
Let it cool and eat!

Super duper easy Home made yogurt!
I thought I would take advantage of the cheap milk now available and make some yogurt. The results were delicious!
Ingredients :
1) Milk . I used a 2 liters of full cream
2) Some fresh natural yogurt as a culture starter. used about 3-4 tablespoons. Not the flavored variety.
Method.
Heat the milk in a saucepan until it boils, stirring regularly with a wooden spoon to prevent burning. Turn off when it boils. Allow to cool for 15-20 minutes, until it reaches 45 C . I used a cooking thermometer to check. Add yogurt and mix in.
Now you need to keep it warm while the culture grows. I poured the liquid into a plastic container, sealed it and placed it in a beach cooler bag. Then shoved and old blanket in the bag over the plastic container and zipped up the bag. The next morning , after about 12 hours to allow the culture to grow . I opened the bag and voila! Fresh yogurt!
But wait there's more.

Ralph's World Famous 4 Ingredients Bread & Butter Pudding
Here's my recipe for bread and butter pudding which was published in the best selling" 4 Ingredients 2" by Kim McCosker and Rachel Bermingham. They misspelled by first name but its me! I made it tonight so here's the recipe:
Ingredients
1 packets Fosters Egg Custard (make sure you use a custard which will set not remain a sauce)
2 &1/2 cups milk
Raisin Toast slices.( I used 6 thick Cafe style which are nice and spicy)
butter
Remove the crust from the bread , butter both sides and layer in a greased dish. Pour the milk in a bowl and add the custard powder. Whisk until the power is dissolved. Carefully pour the liquid over the bread. Allow to soak through for at least 20 minutes. (Stale bread works best as it absorbs the liquid better)
Cook in an oven at about 180 degs C for 30-45 minutes. When the custard boils its done just allow the top to brown a bit. You can cover with some aluminum foil if you are concerned it might burn.
Now I'm going to cut a slice and have it with some ice cream. Yum! Yum!

Eureka !! I have invented a 4 ingredients impossible pie !
I have had two of my recipes published in the 4 Ingredients books. Today I sent in another one. . I have managed to cook a delicious Impossible Pie using only four ingredients. Here it is the super easy, super tasty Ralph's Impossible Pie.
Ingredients:
1 cup shredded coconut
1/2 cup plain flour
1 can sweetened condensed milk
1 packet Forster Clarke's Egg custard
( for the purpose of the 4 Ingredient books water and salt & pepper seasoning are not regarded as ingredients)
Put everything in a blender. Add a can of water to dilute the milk.
Blend until well mixed. Pour into a non stick pie dish and bake at 200 deg until golden brown. Let it cool and set. The coconut will rise to the top and brown and the flour sink to the bottom to form the crust. You need a custard powder that will set firm.
