Broken Glass Jelly
Tessy and I went to a Christmas party on Sunday and we made a Broken Glass Jelly dessert for the party. You need a mould but its very easy to make. Everyone seemed to like it!
Ingredients
3 packets of flavored jelly . We had lemon, raspberry and lime
1 can sweetened condensed milk
300ml cream
1 cup apple juice
1 & 1/2 heaped table spoons unflavored gelatin
Method
Prepare the jelly in three individual bowls as per the instructions on the pack. Allow to set.
Chop up into largish chunks about half of the jelly from each bowl and place the jelly bits into the mould. Boil the apple juice in a microwave and mix in the gelatin until its dissolved. In a separate bowl mix the condensed milk and cream, pour in the apple juice and mix well. Pour the milk mixture over the jelly and close the mould. place in the fridge until set.

Easy butter cakes
I had no desert the other day so thought I might try to bake something. I had no shop cake mix so found the following recipe via google. The result was some lovely cakes I have been taking to work for morning tea.
Ingredients.
2 cups self raising flour
1 cup sugar (I use about 2/3 as I don't like it to sweet)
2 eggs
1 teaspoon vanilla flavoring
2/3 cup milk
3 tablespoons butter melted. (about 100gms)
In a mixing bowl put in the dry ingredients and form a hole in the middle. Crack in the eggs then add the other ingredients. Mix well for a few minutes, you can use an electric mixer but I just use a wooden spoon. When the batter is well mixed and smooth pour into greased cake tins and bake at about 180 deg for about 20 minutes or until cooked.
The simple recipe makes a good base for other type of cakes. I added some blueberries and they were delicious.
