Ingredients
1 x 395g can sweetened condensed milk
100g butter, cubed
255g (1 1/4 cups) brown sugar, firmly packed
2 tbs glucose syrup
150g good-quality dark chocolate, finely chopped
60ml (1/4 cup) Baileys Original Irish Cream liqueur

500grams of Brown Sugar
150 grams of butter
1 tin (approx 395ml) Sweetened condenced milk
250 grams of chocolate melts

Maltese Cheese Pie (Torta tal-Rikotta)
I decided to make a traditional Maltese dish the other night, Maltese Cheese Pie. Delicious with a small salad or by itself.
Ingredients:
600 gms ricotta cheese.
2 sheets puff pastry
1/3 cup chopped parsley
3 eggs beaten.
Method
Add most of the 3 beaten eggs and the parsley to the cheese but save about a teaspoon of the eggs for latter. Mix all together. Season with salt and lots of pepper. Place a sheet of pastry in a greased pie dish to form the bottom. Fill with the cheese mixture. Cover the top with the second pastry sheet. Fold over the edges and close with a fork. Paint the pie with the remaining beaten eggs so it will brown. Cut a few vents in the top to allow steam to escape. Bake at 180C for about 45 minutes or until golden brown.
