Vanilla ice cream without an ice cream machine



I finally worked out a simple way to make creamy vanilla ice cream without an ice cream machine. The trick is sweetened condensed milk. The sugar content prevents the formation of ice crystals.

Ingredients:

 One  395gm can of sweetened condensed milk. I used the light version.
300 gm cream suitable for whipping.
1 teaspoon vanilla essence.

method: 

Add the vanilla to the cream and whip it to soft peaks. (I just plused the cream in my Ninja blender)
Continue to whip while adding the condensed milk.
Place in the freezer over night and in the morning you should have some creamy vanilla ice cream.

Ninjas and Ice Cream





Received my Ninja blender the other day and the first thing I made was some ice cream.  I just followed the recipe shown on those TV commercials for the Ninja:

1 packet frozen berries. (I used raspberries)
1/2 cup sugar
1/2 cup cream

method:

Put everything in the blender and blend. The result is delicious creamy raspberry ice cream.

Maltese Bread Pudding (Puddina tal-hobz)

Decided to cook something my mother used to make , Maltese bread pudding (Puddina ta-Hobz). Haven't had it for years. Turned out yummy! Here it is in all its chocolaty goodness.

Pendle Hill Wholesale Butcher Shop

Coffs Harbour has the Big Banana, Tamworth the Big Guitar, Pendle Hill has the Big Pig obviously named Zarra. We stopped at the well known Pendle Hill Wholesale Butcher Shop today to do some shopping. I am not a vegetarian.

Rashay's Cafe $ Restaurant

After Easter Sunday church services we went to Mt Druitt and had lunch at Rashay's Cafe & Restaurant. Apparently its some new franchise operation. The food was good but I don't think the staff are fully trained yet. I asked if it alcohol was available and the waitress said no but they had a wine & beer menu.

Chili Prawn Pizza was our main, one is certainly enough for two people.




Followed by Mars Bar Cheese cake for dessert.

Strawberry Dessert Cups

1 Pack (about 85g) of Strawberry Jelly Crystals (aka Jello)
100ml of Boiling Water
375ml Can of Evaporated Milk
Whipped Cream
Fresh Strawberries

Preparation Time: 10 minutes
Chilling Time: 4 hours

SERVES 3
